Here are some details about each of the entree choices for our reception:
- Sicily Salmon: A salmon filet stuffed with spinach and feta cheese and served with a lemon dill cream sauce
- Tuscan Chicken: A chicken breast stuffed with goat cheese, prosciutto, sun-dried tomatoes, and herbs and served with a red pepper sauce
- Pasta Primavera (vegetarian): Pasta with vegetables and an olive oil, white wine sauce

I'll be going with the chicken
All I need is triple portions of the goat cheese and prosciutto.
Done and done!
I was also thinking of going with the chicken, but since Eric's getting that, I'll probably go with the salmon. Although, I reserve the right to change my mind 15 times between now and then. ;)
